Cassava - pronounced [kuh-SAH-vuh] and also known as Yuca Root - has been a staple food for millions around the world for centuries. We dry and grind this delicious and sustainable root vegetable into a clean-tasting flour you can always count on.

You may know cassava flour's cousin, tapioca. While they both come from the same root, cassava is the whole plant, while tapioca is just the starch. They function quite differently - both in baking and in your digestive system. They are not interchangeable!
