Grain-Free Blueberry Layer Cake

This simple blueberry cake is so easy to bake and assemble, not to mention it's PACKED with blueberries! From the baked cake, to the jam in between the layers, to the garnishes on top, you won't miss out on blueberry flavor here.
For a cute floral touch, you can dye some of the buttercream green and pipe leaves with fresh blueberries around the outside of your cake. There's no better way to say hello to spring!

Ingredients
Cake:- 3 eggs
- 1 cup neutral oil
- 1 cup sugar
- 1 cup Otto’s Naturals Cassava Flour
- 1 teaspoon Otto’s Naturals Grain-Free Baking Powder
- 1 cup fresh (or frozen) blueberries
Buttercream:
- ⅓ cup blueberry jam
- 1 cup grain-free powdered sugar
- ½ cup vegan (or non-vegan) butter
- ¼ teaspoon green food coloring (organic or natural, if needed)
- ⅓ cup fresh blueberries
Instructions
- Preheat the oven to 180°/ 350°F. Grease and flour 2 (6-inch) round cake tins and set aside.
- Whisk the sugar, oil and eggs together until smooth.
- Add the flour and baking powder and whisk until incorporated. Then fold in the blueberries.
- Transfer the batter into your cake tin and bake for 30-50 minutes or until lightly golden and springy to the touch (may vary depending on your oven, but start with 30 minutes then go in 5-minute increments from there). A knife should come out clean with a few crumbs but not wet.
- As the cakes cool, make the buttercream by creaming the butter and sugar together and whisk until fluffy.
- Once the cake has cooled, level the top and place on a cake stand/plate bottom side up.
- Layer some buttercream on the cake and make a dip in the center and fill it with the blueberry jam.
- Sandwich the cake with the second layer of cake and ice the top and sides of the cake.
- Decorate with blueberries around the entire cake.
- Dye the remaining buttercream green for the blueberry leaves. Transfer the buttercream to a piping bag with the leaf piping tip.
- Pipe the leaves onto each blueberry. Slice and enjoy!
