Grain-Free Chocolate and Raspberry Brownie Cups

We love berries and chocolate in our cakes. Tangy fruits and bittersweet cacao make dessert time indulgent, exciting, and not-too-sweet! And with Otto's Naturals Brownie mixes, baking these desserts is a breeze! You can build these brownie cups as small or as large as you'd like - from catering-style, to large party centerpiece, this dessert is sure to impress everyone!

Ingredients

Brownie Base

  • 1 bag Otto’s Naturals Grain-Free Brownie Mix (Classic or Paleo)
  • ½ cup oil
  • 2 eggs

Cream Filling

  • 1 cup dairy/non-dairy heavy cream
  • 4 Tablespoons powdered sugar
  • 3 Tablespoons cocoa powder
  • 1 cup raspberries 

Instructions

  1. Preheat the oven to 180°C/350°F and line a 9x13-inch baking pan with parchment paper and set it aside.
  2. Mix together the brownie mix, oil and eggs until smooth.
  3. Transfer the batter to the prepared tray and bake for 10-12 minutes, or until baked through.
  4. As the brownie cools make the chocolate cream, by whisking together Double cream until soft peaks then add the cocoa powder and sugar and whisk until smooth. Then transfer it to a piping bag.
  5. Using the bottom of the mini container you’ll be layering the dessert in, cut out the brownie layers to perfectly fit in the box. (You’ll need 2 brownie layers per box)
  6. Place the first brownie layer at the bottom of the container, then pipe a layer of cream on top. Top with raspberries and cover with the second brownie layer. Pipe on another layer of cream and then top with raspberries.
  7. Repeat this process with the other containers until you’ve used up all the ingredients. Enjoy!
