Grain-Free Brownie Mousse Pie

This ultra rich & decadent chocolate mousse pie has another secret to it: it's vegan! With silken tofu as the base to this chocolate mousse, all you need is some plant-based milk & cream to make this entirely dairy-free!
Ingredients
Brownie Base:
- 1 bag Otto’s Naturals Grain-Free Brownie Mix (Classic or Paleo)
- ½ cup melted vegan/non-vegan butter
- 2 Tablespoons ground flaxseed
- 6 Tablespoons water
Chocolate Mousse:
- ¼ cup cocoa powder
- â…“ cup sugar
- 2 Tablespoons Otto’s Naturals Cassava Flour
- 1 cup melted vegan/non-vegan chocolate
- 1 package/340g silken tofu
Chocolate Ganache:
- ½ cup chocolate
- ⅓ cup plant-based or regular milk
Topping:
- ⅔ cup plant-based or regular whipping cream
- Chocolate shavings for garnish (optional)
Instructions
- Preheat the oven to 365°F. Grease and line a round 7-inch springform baking tin and set aside.
- Mix together the flax egg and water in a small bowl and set aside for at least 5 minutes.
- In a mixing bowl, mix together the brownie mix, melted butter and flax egg until combined.
- Transfer to prepared cake tin and bake for 25-30 minutes.
- As the brownies cool, begin making the mousse filling: blend the tofu until smooth.
- Mix together the sugar, cocoa powder, cassava flour, melted chocolate and tofu in a mixing bowl until smooth and fully combined.
- Pour the chocolate mousse over the cooled brownie layer.
- Make the ganache by melting together the chocolate and milk in the microwave at 30 second intervals until completely melted and smooth. Spread the chocolate ganache over the mousse and set in the freezer for 30-60 minutes or until the mousse is stable and set.
- As the mousse sets, whip the cream until stiff. Spread it over the set chocolate mousse, and finish with a sprinkle of chocolate shavings. Slice and enjoy!
