Grain-Free Cinnamon Apple Blondies

These rich blondies are studded with cinnamon-spiced apple filling for a quick & easy fall treat!
Ingredients
Blondie:
- 2 ⅓ cups Otto’s Naturals Cassava Flour
- 1 cup light brown sugar
- 1 cup (2 sticks) vegan (or non-vegan) butter, melted
- 2 eggs
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
Apple Filling:
- 3 apples
- 1 Tablespoon vegan (or non-vegan) butter
- 1 teaspoon cinnamon
- 2 Tablespoons water
- 1 Tablespoon Otto’s Naturals Cassava Flour
Cinnamon Buttercream:
- ½ cup (or 1 stick) vegan (or non-vegan) butter
- 1 cup powdered sugar
- ½ teaspoon cinnamon
Instructions
- Preheat oven to 365°F. Grease and line an 8x8-inch square baking pan and set aside while you make the blondies.
- Start by chopping and peeling the apples. Transfer the chopped apples to a pan along with the butter, sugar, flour and water.
- Cook the apples on medium heat until the apples become caramelized and soft. Set aside.
- Next brown the butter by heating the butter in a pan on medium heat for 3-5 minutes or until the butter has melted and browned.
- Remove the butter from the heat and set aside to cool.
- Add the sugar and eggs to the cooled browned butter.
- Next mix in the flour, cinnamon and nutmeg. Fold in the cooled apples.
- Transfer the batter to your prepared baking pan and bake for 20-25 minutes or until golden brown. Remove from the oven and let cool.
- As the blondies cool, make the buttercream by beating the butter for 3-5 minutes until pale and fluffy.
- Add the icing sugar and cinnamon to the butter and beat for a further 5 minutes.
- Spread the buttercream onto the cool blondies, slice into squares and enjoy!
