These rich blondies are studded with cinnamon-spiced apple filling for a quick & easy fall treat!

Ingredients

Apple Filling:

Cinnamon Buttercream:

  • ½ cup (or 1 stick) vegan (or non-vegan) butter
  • 1 cup powdered sugar
  • ½ teaspoon cinnamon

Instructions

  1. Preheat oven to 365°F. Grease and line an 8x8-inch square baking pan and set aside while you make the blondies.
  2. Start by chopping and peeling the apples. Transfer the chopped apples to a pan along with the butter, sugar, flour and water.
  3. Cook the apples on medium heat until the apples become caramelized and soft. Set aside.
  4. Next brown the butter by heating the butter in a pan on medium heat for 3-5 minutes or until the butter has melted and browned.
  5. Remove the butter from the heat and set aside to cool.
  6. Add the sugar and eggs to the cooled browned butter.
  7. Next mix in the flour, cinnamon and nutmeg. Fold in the cooled apples.
  8. Transfer the batter to your prepared baking pan and bake for 20-25 minutes or until golden brown. Remove from the oven and let cool.
  9. As the blondies cool, make the buttercream by beating the butter for 3-5 minutes until pale and fluffy.
  10. Add the icing sugar and cinnamon to the butter and beat for a further 5 minutes.
  11. Spread the buttercream onto the cool blondies, slice into squares and enjoy!
