Easy Grain-Free Banana Snack Cake

We love banana bread, banana muffins, banana Bundt cakes. The works. We also love a super simple & quick snack cake that uses up those few bananas that have been sitting on the counter. Pair with a cream cheese frosting and some chopped nuts for a classy snack cake, or opt for dairy-free frosting and no nuts if you're going something a bit more laid back! Regardless of your cake customizations, your friends and family will be sure to go bananas over this delicious grain-free delight!
Ingredients
- 1 ¼ cups Otto's Naturals - Cassava Flour
- 1 cup organic cane sugar
- ¾ cup avocado oilÂ
- 2 eggsÂ
- ½ teaspoon baking soda
- 1 teaspoon Otto’s Naturals Grain-Free Baking Powder
- ¼ teaspoon saltÂ
- 1 cup mashed ripe bananas (approx. 3 small bananas)Â
Cream Cheese Frosting (or your favorite frosting recipe!)
- ½ cup butter, softened
- 8 oz. cream cheese, room temperature
- 1 ½ cups powdered sugar
- 1 tsp. vanilla extract
Instructions
- Preheat the oven to 325°F. Line an 8x8-inch glass baking pan with parchment paper.Â
- In a large bowl, combine the cassava flour, cane sugar, baking soda, baking powder, and salt. Stir until well combined.Â
- Add the avocado oil, eggs, and mashed banana. Stir until a smooth batter forms.Â
- Pour the batter into the baking pan. Spread the batter evenly into the pan.Â
- Bake for 40-45 minutes. The banana cake should be golden brown and a toothpick inserted into the center should come out clean or with dry crumbs.Â
- Let the cake cool completely before frosting and decorating!
- To make the frosting, beat the softened butter in a mixing bowl until it is light and creamy. Beat in the cream cheese and powdered sugar until a smooth, fluffy frosting is formed. Beat in the vanilla extract.
