The colder weather makes us want to bake up something nice and toasty. With just a small touch of molasses and some warming spices, Whisk me Free has transformed classic brookies into something a little more winter-inspired! These brookies hold the essence of both cakey and cookie forms of gingerbread, yet they're much much easier thanks to our grain-free baking mixes! Now you can enjoy the flavors of gingerbread without any of the grains, gluten, or chilling, rolling, & cutting. Better yet, this recipe is also dairy-free if you use a dark or vegan chocolate chips!

Ingredients

Cookie layer:

Brownie Layer:

  • ½ bag Otto’s Naturals Grain-Free Brownie Mix (Classic or Paleo)
  • ½ Tablespoon molasses
  • ½ teaspoon ground ginger
  • ½ teaspoon cinnamon
  • ¼ cup oil
  • 1 egg

Instructions

  1. Preheat oven to 180°C/350°F. Line a 6-inch* square baking pan with parchment paper and set aside.
  2. Make the cookie layer by mixing the cookie mix, applesauce, and oil until it comes together in a dough. Mix in the chocolate chips. Set aside.
  3. Make the brownie layer by mixing the brownie mix, egg, oil, molasses, cinnamon, and ginger.
  4. Pour the brownie batter into the prepared baking pan. Evenly distribute the cookie dough layer on top. Bake for 35-40 minutes, or until lightly golden.
  5. Once cooled, slice and enjoy!

*NOTE: If you don't have a 6-inch baking pan, you can double the recipe and bake it in a square 8-inch or 9-inch pan. An 8-inch pan may result in thicker brookies (and a longer bake time) than the original recipe, and a 9-inch pan may result in thinner brookies (and a shorter bake time) than pictured.

What is gingerbread?

Though gingerbread is mostly known as crisp, frosted molasses-ginger cookies in the USA, there are actually many forms of gingerbread! From English biscuits, to even thinner & crispier cookies, to cakes, to loaves, there are many types of gingerbread desserts out there! The molasses adds a nice smoky, rich dark caramel flavor and color, which is one of the iconic parts about gingerbread!
