Confetti Cupcakes (or Cake)

Grain-Free, Gluten-Free

Ingredients

  • 1 recipe Cassava Flour White Cake or Cupcakes
  • ½ cup naturally-colored sprinkles (regular works too)
  • Your favorite frosting!
  • Extra sprinkles for decorating

 Instructions

  1. Fold sprinkles in batter after folding in the meringue, being very careful not to deflate the batter. Bake as directed in desired pan shape and cool completely.
  2. Decorate with favorite icing and extra sprinkles!

Confetti Cookies

Gluten-Free, Grain-Free, Nut-Free, Dairy-Free option, Egg-Free option

Ingredients

  • 1 recipe Soft Sugar Cookies
  • ¾ cup naturally-colored sprinkles (regular works too)
  • ½ cup white chocolate chips

 Instructions

  1. Once dough is completed, fold in sprinkles and chocolate chips.
  2. Roll dough into Tablespoon-sized balls. 
  3. Place them on the baking sheets and gently flatten each ball to ½-inch thickness. Add more sprinkles and chocolate chips on top for decoration if desired. Bake for 6-8 minutes at 375°F.
  4. Let the cookies cool on the pans for 3-5 minutes before transferring to a cooling rack
