Have you heard of Impossible Pies before? They're made almost entirely in a blender, so they're super easy to bake. They technically have no crust, but still pack a ton of flavor! The impossible part? This pie's custard mixture and baking process almost magically form its own crust! We've taken this classic tradition and elevated it to grain-free Fall perfection! This impossibly-delicious pumpkin pie melts in your mouth and will keep the crowds coming back for more!

Servings: 9-inch pie
Ingredients
- 1 cup pumpkin puree
- 1 cup coconut milk
- 1 cup coconut sugar
- ⅓ cup Otto’s Naturals - Cassava Flour
- 4 eggs
- 6 Tablespoons melted coconut oil
- 2 teaspoon vanilla extract
- 1 ½ teaspoons pumpkin pie spice
- ¼ teaspoon Otto's Naturals Grain-Free Baking Powder
- ¼ teaspoon salt
Instructions
- Preheat oven to 350°F.
- Add all the ingredients into a blender and blend until fully combined, scraping down sides as needed.
- Pour into a greased 9-inch pie pan.
- Bake for 55 minutes - 1 hour or until the top is set and beautifully golden brown.
- Cool until room temperature (about an hour) before cutting.
