Ingredients
- 1 ½ cups Otto's Naturals - Cassava Flour
- ½ cup cold unsalted butter, cubed
- ¼ cup sugar
- 2 teaspoons Otto's Naturals Grain-Free Baking Powder
- ¼ teaspoon salt
- ½ cup plain yogurt
- ½ cup cold water
- ½ cup chocolate chips*
Instructions
- Line a baking sheet with parchment paper.
- In a food processor, place the cassava flour, sugar, baking powder, and salt. Add the cold butter cubes to the food processor.
- Pulse until the mixture is crumbly. Pour the mixture into a large mixing bowl.
- Whisk the yogurt and water together. Add to the flour mixture. Stir until the dough forms a loose ball. Add the chocolate chips and stir until they are evenly distributed.
- Transfer the mixture to a lightly floured piece of parchment paper. Shape the dough into a flat disk that is about 1-inch high and about 6.25-inches round. Cut the disk into 8 equal wedges.
- Place each scone on the baking sheet. Chill the scones in the freezer for 20-30 minutes. While the scones are chilling, preheat the oven to 375°F.
- Bake for 30-35 minutes. The scones should be lightly browned around the edges.
- Let cool before enjoying! For the best flakey texture, let the scones cool completely and allow them to chill in the fridge before serving.
*If you're not a fan of chocolate, dried chopped fruit (such as berries) and 2 teaspoons of citrus zest make for a wonderful fruity treat! We recommend soaking 1/2 cup dried fruit in hot water until tender, draining, and patting dry. This prevents the fruit from soaking up moisture from the scones.
*If you don't want any mix-ins, plain scones are great with a bit of butter (or clotted cream!) and jam.
How To Store Grain-Free Scones:
Store your baked scones at room temperature for up to 5 days in an airtight container or freeze them for up to 3 months. We recommend wrapping them individually in plastic wrap if you plan on freezing them. Thaw at room temperature when ready to enjoy.
