This simple baked oat cobbler is made with a sweet & juicy peach feelings. But if peaches aren't your thing (or if they're not in season), feel free to substitute it with your favorite stone fruits, berries, pome fruits, or even a mix! This customizable cobbler recipe means you can enjoy it any time of the year, and it will still feel new to you and your friends & family! Ingredients
- ¾ cup Otto’s Naturals Cassava Flour
- ½ cup gluten-free old fashioned rolled oats
- ½ cup non-dairy/dairy milk
- 2 eggs
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground ginger
- ¼ teaspoon allspice
- 3 peaches
- ½ Tablespoon non-dairy/dairy butter
- 1 Tablespoon brown sugar
- 2 scoops vanilla ice cream or yogurt of choice, for topping
Instructions
- Preheat the oven to 180°C/350°F.
- Slice the peaches and place them in a pan with the butter and brown sugar.Â
- Cook peaches on low heat for 5 minutes, or until it softens. Spread them out on the bottom of a 9x13-inch baking pan.
- Mix together the oats, cassava flour, eggs, cinnamon, ginger and allspice until smooth.Â
- Pour the batter on top of the peaches and bake for 15-20 minutes, or until lightly golden.
- Once baked, allow it to cool for at least 10 minutes before serving with vanilla ice cream or yogurt. Enjoy!
