Grain-Free Tiramisu

Though this may not look like a traditional tiramisu, we still wanted to share with you a version that anyone can enjoy! With cassava flour-based "ladyfinger" sponges and a lightly-sweetened mascarpone cream (with easy vegan swaps), you'll never even miss the wheat or dairy!

Ingredients
Ladyfingers:
- 2 cups Otto’s Naturals Cassava Flour
- 1 cup sugar
- ¼ cup neutral oil
- 2 cups milk of choice
- 1 teaspoon Otto’s Naturals Grain-Free Baking Powder
- 1 ½ cups strongly-brewed coffee
Cream Filling:
- ¾ cup vegan (or non-vegan) heavy whipping cream
- ¾ cup (or non-vegan) mascarpone
- 4 Tablespoons sugar
- 2 Tablespoons cocoa powder, for dusting
Instructions
- Preheat the oven to 180°C/350°F and line a baking tray with parchment paper. Set aside.
- Whisk together the flour, baking powder, sugar, milk and oil together until smooth.
- Transfer the batter into a piping bag and pipe the lady fingers onto the prepared baking sheet. Bake for 10-12 minutes until lightly golden brown.
- As the sponge fingers cool, make the cream filling by whisking the heavy cream into stiff peaks, then whisk in the mascarpone cream and sugar together.
- Quickly dip the sponge fingers inside the cooled brewed coffee. They will fall apart if they soak too long.
- Align the sponge fingers across the bottom of a square baking pan.
- Add half the cream mixture and spread it evenly across the sponge fingers. Layer with another layer of soaked sponge fingers and then cover it with the remaining cream.
- Set the tiramisu in the fridge overnight.
- Dust with cocoa powder before serving. Slice and enjoy!
