Grain-Free Apple Hand Pies

This on-the-go toaster pastry is filled with warm fall spices and chunks of apple. Knowing what goes into your food is so important, which is why we love making breakfast pastries like hand pies. Even though they may be a labor of love, they're well worth it!

Ingredients

Filling:

  • 2 apples
  • 1 ½ Tablespoons vegan (or non-vegan) butter
  • â…“ cup sugar
  • ½ teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon mixed spice or pumpkin pie spice
  • 1 Tablespoon Otto’s Naturals Cassava Flour
  • 2 Tablespoons lemon juice

Pastry:

Icing:

  • ½ cup grain-free powdered sugar
  • 2 teaspoon water

Instructions:

  1. Preheat the oven to 365°F. Line a baking tray with parchment paper and set aside while you make the apple pie filling.
  2. To make the apple pie filling, peel and dice your apples and place them in a pan along with the butter. Cook on low heat for 5 minutes.
  3. Add the cinnamon, mixed spice or pumpkin pie spice, ground ginger, cassava flour and lemon juice to the pan.
  4. Stir over medium heat until the apple mixture begins to thicken. Set aside while you make the pastry.
  5. To make the pastry, combine the cassava flour and oil until it reaches a crumb-like consistency.
  6. Add the water and mix until the dough comes together.
  7. Roll the dough in between 2 sheets of plastic wrap to prevent the dough from sticking to the rolling surface.
  8. Remove the top sheet of plastic wrap and cut the dough into 12 squares.
  9. Spoon the apple sauce filling in the center of 6 squares. Cover with the remaining 6 plain pastry squares.
    NOTE: You will notice the top of the pastry will crack at the top as you press the pastry down. This is perfectly fine and will help the pastry bake through.
  10. Seal the pastry with a fork around the sides of the pastry and brush with milk. (The milk will make the pastry golden when baked.)
  11. Bake for 20-25 minutes or until the pastry is lightly golden in color.
  12. As the pies cool, make the icing by mixing together the powdered sugar and water until it reaches a thick but runny consistency.
  13. Once the pies have cooled, drizzle with the icing. Enjoy!
