Grain-Free Chocolate-Covered Strawberry Brownies

These indulgent treats come with a hefty serving of fruit on top! ;) So we won't judge if you eat more than one... in fact, we encourage it! These are so delicious - the perfect marriage between strawberries and chocolate!
Ingredients
Strawberry buttercream topping:
- 1 Tablespoon strawberry jam
- ¼ cup vegan (or non-vegan) butter, room temperature
- ¾ cup grain-free powdered sugar
- 2 drops pink food coloring (natural or organic, if possible)
- 1 cup fresh strawberries, chopped
- ½ cup vegan (or non-vegan) dark chocolate
Instructions
- Preheat the oven to 180°C/350°F and line an 8x8-inch square baking tin with parchment paper and set it aside.
- Combine the brownie mix, oil and eggs until smooth.
- Transfer the batter to the prepared tin and bake for 30-40 mins.
- As the brownie cools make the strawberry buttercream by creaming together the butter, powdered sugar, strawberry jam and pink food coloring until smooth and fluffy.
- Spread the buttercream over the cooled brownie.
- Scatter the chopped strawberries on top making sure to cover the whole surface.
- Next, melt the chocolate and drizzle it over the strawberries.
- Set the brownies in the fridge for at least 30 mins before slicing and enjoy!
