Ingredients

  • ¼ cup vegan (or non-vegan) white chocolate
  • 3 Tablespoons vegan (or non-vegan) butter
  • 1 Tablespoon ground flax seed
  • 3 Tablespoons water
  • ½ cup grain-free powdered sugar
  • ⅓ cup Otto’s Naturals Cassava Flour
  • ¼ cup fresh (or frozen) raspberries
  • 2 vegan (or non-vegan) white chocolate truffles
  • Vegan (or non-vegan) ice cream

Instructions

  1. Preheat the oven to 180°C/350°F Grease and flour 2 ramekins and set aside.
  2. Mix the flaxseed and water in a bowl and set aside for at least 5 minutes.
  3. In a separate bowl melt the butter and chocolate in the microwave in 30 second intervals until melted.
  4. Add the flaxseed to the butter mix, then add the flour and powdered sugar. Mix until smooth.
  5. Fold in the raspberries and evenly divide the batter between the 2 ramekins.
  6. Place the truffle in the center of each ramekin and bake for 10-15 minutes until lightly golden brown.
  7. Turn the ramekins upside down to remove the cake. Top with a scoop of ice cream and enjoy!
