Grain-Free White Chocolate Raspberry Lava Cakes

Ingredients
- ¼ cup vegan (or non-vegan) white chocolate
- 3 Tablespoons vegan (or non-vegan) butter
- 1 Tablespoon ground flax seed
- 3 Tablespoons water
- ½ cup grain-free powdered sugar
- ⅓ cup Otto’s Naturals Cassava Flour
- ¼ cup fresh (or frozen) raspberries
- 2 vegan (or non-vegan) white chocolate truffles
- Vegan (or non-vegan) ice cream
Instructions
- Preheat the oven to 180°C/350°F Grease and flour 2 ramekins and set aside.
- Mix the flaxseed and water in a bowl and set aside for at least 5 minutes.
- In a separate bowl melt the butter and chocolate in the microwave in 30 second intervals until melted.
- Add the flaxseed to the butter mix, then add the flour and powdered sugar. Mix until smooth.
- Fold in the raspberries and evenly divide the batter between the 2 ramekins.
- Place the truffle in the center of each ramekin and bake for 10-15 minutes until lightly golden brown.
- Turn the ramekins upside down to remove the cake. Top with a scoop of ice cream and enjoy!
