Grain-Free Pumpkin Donut Holes

These donut holes are easy to make and perfect for sharing. Not only can you control the quality of the ingredients going into your dessert snacks, but you can also rest easy knowing that these donut holes don't even require frying! Just scoop, roll, and bake! Much healthier (with a much easier cleanup) than your traditional fried donut holes. Enjoy with a bit of glaze, or brush with melted coconut oil and roll in cinnamon sugar if that's more your style. It's your kitchen, so you get to make them however you want!

Ingredients

Glaze:

  • 1 ¼ cups powdered sugar
  • 4 teaspoons water or choice of milk 
  • Cinnamon sugar for garnish

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. Combine all of the ingredients in a large mixing bowl and stir until everything is combined. You should have a smooth dough that can easily be handled. If the dough is too sticky, wait a few minutes for the moisture to be absorbed by the flour. If it seems too dry, add a little more yogurt or pumpkin puree until the batter holds together but is not sticky. 
  3. Use a spoon to scoop 16 balls of dough and roll the balls between your hands to shape donut holes. Place the donut holes on the baking sheet. 
  4. Bake for 18-20 minutes. The donut holes will have lightly browned bottoms. 
  5. Allow the donut holes to cool completely before putting a glaze on them. 
  6. To make the glaze, combine the glaze ingredients in a small bowl and mix until a smooth glaze is formed. Take each donut hole and roll it in the glaze. Place the donut holes on a baking sheet and sprinkle them with cinnamon sugar. Allow the glaze to drip down the sides and harden on the donut hole.

Note: These donut holes are best eaten fresh. After 24 hours the glaze starts to soften and will drip off the donut hole.
