We love cinnamon rolls, but let's be honest... sometimes we love easy breakfasts even more! Cinnamon buns are certainly a labor of love, but on days when we're feeling a little more rushed, these grain-free cinnamon roll muffins are the perfect quick fix. Just make a plain muffin batter, add a swirl of cinnamon butter, and bake. For that extra perfect finish, add a touch of cream cheese frosting or a drizzle of vanilla glaze. No kneading, rolling, cutting, or proofing required. And no need to miss out on this breakfast classic. This muffin recipe is sure to please even the pickiest of eaters!

Ingredients
Cinnamon Butter
- ½ cup dairy/non-dairy butter, softened
- ½ cup brown sugar
- ½ Tablespoon cinnamon
Muffins
- 2 egg whites
- 2 egg yolks
- ¾ cup sugar
- 1 ½ cups Otto’s Naturals Cassava Flour
- 1 teaspoon Otto’s Naturals Grain-Free Baking Powder
- ¾ cup dairy/non-dairy milk
- 1 Tablespoon apple cider vinegar
- ½ cup oil
- ½ cup dairy/non-dairy cream cheese frosting or favorite vanilla icing, optional
Instructions
- Preheat the oven to 180°C/350°F. Line 12 standard muffin cups and set aside.
- Make the cinnamon butter by creaming together the butter, brown sugar, and cinnamon until smooth. Place into a piping bag and set aside.
- To make the muffins, mix the milk and vinegar together and let sit for 5 minutes.
- Whip the egg whites in a bowl with an electric mixer until it reaches stiff peaks. Set aside.
- In a separate bowl, mix together the egg yolks, sugar, cassava flour, oil, and milk mixture until smooth.
- Gently fold in the egg whites into the batter until just fully combined
- Divide the batter evenly into the muffin liners.
- Pipe a swirl of the cinnamon butter on top of each muffin. Bake for 30-35 minutes, or until the muffins are lightly golden and spring back when touched.
- Let the muffins cool for at least 10-20 minutes before spreading cream cheese frosting or drizzling icing over the tops. Enjoy!
