Now we've realized it even makes a great base for a cheesecake. Thus, these cheesecake cookie bars were born! We use chocolate chips for a classic cookie bar base, but feel free to get creative and bring on other mix-ins that can bring your cheesecake to new worlds. Grain-free got easy with Otto's, but it got delicious and so fun too!

Instructions

  1. Line an 8x8-inch baking pan with parchment paper. Preheat the oven to 350°F. 
  2. Prepare the grain-free cookie mix as directed on the bag using the ½ cup of butter, 1 egg, and vanilla extract. Stir until the batter is smooth. Fold in the chocolate chips. 
  3. Spread approximately â…” of the cookie dough evenly into the baking pan.
  4. In a large mixing bowl, beat the cream cheese and cane sugar together until they are smooth and creamy. Add the eggs, flour, and vanilla extract. Beat until the mixture is smooth. 
  5. Spread the cream cheese mixture into the baking pan over the cookie dough layer. Sprinkle the remaining cookie dough evenly over the cream cheese layer. 
  6. Bake the bars for 45-50 minutes or until the cream cheese layer is set and the cookie dough is browned. 
  7. Chill the bars in the fridge for at least 4 hours before slicing and serving. Enjoy!
