Grain-Free Graham Crackers for S'mores

Summer is right around the corner, and we cant stop dreaming of sitting by a cozy campfire on a cool night. No backyard or camping adventure is complete without s'mores though, and we all know s'mores need a great graham cracker to hold it all together! That's where this recipe comes in: with the toasty flavors of molasses and cinnamon, this grain-free graham cracker is the perfect addition to your summer festivities. Or enjoy plain as a better-for-you afternoon snack!
Ingredients
- 3 Tablespoons butter, meltedÂ
- 1 Tablespoon blackstrap molassesÂ
- 1 eggÂ
-  ½ cup organic coconut sugar
- 1 cup Otto's Naturals - Cassava Flour
- ¼ teaspoon baking sodaÂ
- ½ teaspoon saltÂ
- 1 teaspoon ground cinnamonÂ
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F. Line a cookie sheet with parchment paper.Â
- In a large bowl, combine the melted butter, molasses, egg, and coconut sugar. Stir until well combined.Â
- Add the cassava flour, baking soda, salt, cinnamon, and vanilla. Stir until a smooth dough forms. You should be able to handle the dough without it sticking to your hands.Â
- Lightly dust a sheet of parchment paper with cassava flour. Place the dough on the parchment paper and flatten it slightly into a rectangle. Place another piece of parchment paper over the dough and use a rolling pin to flatten the dough to about ¼-â…› inch thick. Thicker graham crackers will be soft and thinner graham crackers will get more crunchy.Â
- Remove the top layer of parchment paper and use a pizza cutter to slice the dough into graham crackers. We cut ours into about 2x3-inch rectangles.Â
- Use a spatula to carefully transfer each graham cracker onto the cookie sheet. Use a sharp knife to make a score line across the middle of each cracker. Use a fork to poke two sets of holes above and below the score mark to make classic graham cracker markings.Â
- Bake for 12-15 minutes. Cool for 5 minutes on the cookie sheets before transferring the graham crackers to a cooling rack to cool completely before enjoying!Â
