Perfect Grain-Free Peppermint Brownies

IngredientsÂ
Brownies:
- 1 bag of Otto's Naturals Grain-Free Brownie Mix (Classic or Paleo)
- 2 eggs
- 1/2 cup avocado or other neutral oil
- 1 teaspoon vanilla extract
- 1 cup of semi-sweet chocolate chips
- 1 tsp peppermint extract
Frosting:
- 1/4 cup unsalted butter softened to room temperature
- 1 cups confectioners’ sugar
- 1 Tablespoon milkÂ
- 1/2 teaspoon peppermint extract
- 3-4 crushed up candy canes (for sprinkling on top)
Chocolate Ganache:
- 1/4 unsalted butter
- 1/2 cup semi-sweet chocolate chips
InstructionsÂ
- To make the brownies:Â add all ingredients to mixing bowl and mix until smooth.
- Line a brownie pan with parchment paper and pour in batter. Spread evenly.
- Bake in a preheated 350°F oven for 20-25 min. Cool completely.
- For the frosting:Â add room temperature butter to the mixer and mix on low until smooth.
- Pour in powdered sugar and milk. Add peppermint extract.
- Blend on high until fully mixed, feel free to add more milk to reach the desired texture.
- Wait till brownies are cool. Apply on top of brownies.
- Prepare the chocolate ganache: melt the butter and chocolate chips on the stovetop over low heat. Make sure to stir consistently.
- Once fully melted, cool slightly to prevent the ganache from melting the frosting layer. Once lukewarm, pour on top of frosted brownies.
- Sprinkle on crushed-up candy canes.
- Let chill in the fridge for 1-4 hours. Cut. Enjoy!
