Grain-Free Pear Skillet Pancake

This slightly-spiced warm pear skillet pancake can be topped with a bit of yogurt or cream and maple syrup for that autumnal à la mode feeling. You can substitute with thinly-sliced apples or another favorite fruit. This custardy, eggy pancake is a quick and easy way to whip up breakfast and get plenty of fruit in one sitting!
Ingredients
- ½ cup Otto’s Naturals Cassava Flour
- 3 eggs
- ½ cup non-dairy/dairy milk
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground ginger
- 2 Tablespoons soft brown sugar
- 2 pears
- 2 Tablespoons non-dairy/dairy yogurt
- 2 Tablespoons maple syrup
Instructions
- Preheat the oven to 180°C/350°F. Grease a 6-inch skillet and set aside.
- Slice the pears thinly, removing the seeds, and place half of them at the bottom of the skillet.
- Mix the cassava flour, eggs, sugar, milk, ginger and cinnamon together until smooth. Pour the batter over the pears, then top with the remaining sliced pears.
- Bake for 10-15 minutes, or until lightly browned and fully cooked through. Allow it to cool for at least 10 mins.
- Once cooled, top with yogurt and maple syrup. Serves 2.
