This slightly-spiced warm pear skillet pancake can be topped with a bit of yogurt or cream and maple syrup for that autumnal à la mode feeling. You can substitute with thinly-sliced apples or another favorite fruit. This custardy, eggy pancake is a quick and easy way to whip up breakfast and get plenty of fruit in one sitting!

Ingredients

  • ½ cup Otto’s Naturals Cassava Flour
  • 3 eggs
  • ½ cup non-dairy/dairy milk
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • 2 Tablespoons soft brown sugar
  • 2 pears
  • 2 Tablespoons non-dairy/dairy yogurt
  • 2 Tablespoons maple syrup

Instructions

  1. Preheat the oven to 180°C/350°F. Grease a 6-inch skillet and set aside.
  2. Slice the pears thinly, removing the seeds, and place half of them at the bottom of the skillet.
  3. Mix the cassava flour, eggs, sugar, milk, ginger and cinnamon together until smooth. Pour the batter over the pears, then top with the remaining sliced pears.
  4. Bake for 10-15 minutes, or until lightly browned and fully cooked through. Allow it to cool for at least 10 mins.
  5. Once cooled, top with yogurt and maple syrup. Serves 2.
