These tender grain-free scones have a touch of vanilla bean for a bit of sweet delicateness! With just a few simple ingredients, you'll have freshly baked better-for-you scones in under an hour! Not only is this recipe gluten-free and grain-free, but its been tested (and successfully made) completely vegan as well! Everyone can enjoy an easy breakfast or afternoon tea with these tender treats.

Ingredients

Scones:

Icing:

  • â…“ cup powdered sugar
  • ½ Tablespoon water
  • ½ vanilla bean pod (or ½ tsp vanilla bean extract)

Instructions

  1. Preheat oven to 365°F. Line a baking tray with parchment paper and set aside while you make the scones.
  2. Start by rubbing together the cassava flour, butter and sugar until it reaches a crumb consistency.
  3. Cut open the vanilla pod and scoop out the vanilla beans with a knife. Add it to the cassava flour mixture and mix until combined.
  4. Add the milk to the cassava flour mixture and mix until the dough comes together.
  5. Place the dough onto the baking sheet and shape into a round thick disk around 6 to 7-inches wide and 3 to 5-inches thick.
  6. Slice the disc into 8 equal triangles and space them out on the prepared baking tray.
  7. Bake for 15-20 minutes or until golden.
  8. As the scones cool, make the icing by mixing together the powdered sugar, water and the rest of the vanilla beans until smooth.
  9. Spread the icing over the cooled scones and enjoy!
