Ingredients
Cookie:- 1 bag Otto’s Naturals Grain-Free Ultimate Cookie Mix
- ½ cup (or 1 stick) vegan (or non-vegan) butter, melted
- 1 Tablespoon flax seed
- 3 Tablespoons water
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ cup smooth applesauce
Apple Filling:
- 1 apple
- ½ Tablespoon vegan (or non-vegan) butter
- 1 teaspoon cinnamon
- ½ Tablespoon water
- 1 Tablespoon Otto’s Naturals Cassava Flour
Icing:
- 5 Tablespoons powdered sugar
- 1 Tablespoon water
- Caramel sauce (optional, to use instead of icing)
Instructions:
- Preheat oven to 365°F. Line a baking tray with parchment paper and set aside.
- In a small bowl, combine the flax seed and water. Set aside for at least 5 minutes.
- Combine the cookie mix, cinnamon and nutmeg in a separate bowl.
- Add the melted butter, applesauce and flaxseed mixture to the cookie mixture.
- Mix the ingredients together until it comes together into a dough.
- Divide the dough into 6-8 even cookie dough balls and place them on your baking tray.
- Bake the cookies for 10-15 minutes or until until the edges are lightly golden brown
- Before the cookies cool, make little wells in the center of the cookies with the back of a spoon. (This is where the apple pie filling will be placed.)
- Meanwhile, to make the apple pie filling, peel and chop the apple. Transfer to a pan along with the butter, sugar, flour and water.
- Cook on medium heat until the apples become caramelized and soft.
- Spoon the apple pie filling into the center of the cookies.
- Make the icing by mixing together the water and powdered sugar. (If desired, you can use caramel sauce instead of icing.)
- Drizzle of icing (or caramel sauce) over the cookies and enjoy!
