Cookie:

Apple Filling:

Icing:
  • 5 Tablespoons powdered sugar
  • 1 Tablespoon water
  • Caramel sauce (optional, to use instead of icing)

Instructions:

  1. Preheat oven to 365°F. Line a baking tray with parchment paper and set aside.
  2. In a small bowl, combine the flax seed and water. Set aside for at least 5 minutes.
  3. Combine the cookie mix, cinnamon and nutmeg in a separate bowl.
  4. Add the melted butter, applesauce and flaxseed mixture to the cookie mixture.
  5. Mix the ingredients together until it comes together into a dough.
  6. Divide the dough into 6-8 even cookie dough balls and place them on your baking tray.
  7. Bake the cookies for 10-15 minutes or until until the edges are lightly golden brown
  8. Before the cookies cool, make little wells in the center of the cookies with the back of a spoon. (This is where the apple pie filling will be placed.)
  9. Meanwhile, to make the apple pie filling, peel and chop the apple. Transfer to a pan along with the butter, sugar, flour and water.
  10. Cook on medium heat until the apples become caramelized and soft.
  11. Spoon the apple pie filling into the center of the cookies.
  12. Make the icing by mixing together the water and powdered sugar. (If desired, you can use caramel sauce instead of icing.)
  13. Drizzle of icing (or caramel sauce) over the cookies and enjoy!
