Pumpkin Spice Latte Tres Leches Cake with Cream Cheese Frosting

Ingredients

Pumpkin Sponge

Latte Soak

  • ½ cup brewed coffee
  • ½ cup dairy/non-dairy milk
  • ½ tsp pumpkin spice

Cream Cheese Frosting

  • 1 cup dairy/non-dairy cream cheese, softened
  • 1 cup dairy/non-dairy butter, softened
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 180°C/350°F. Line a 9x13-inch baking pan with parchment paper and set aside.
  2. To make pumpkin sponge, mix milk and vinegar together. Set aside for 5 minutes.
  3. Mix together the eggs, sugar, cassava flour, milk mixture, pumpkin puree, oil, pumpkin spice, and baking powder in a mixing bowl until smooth. Scrape down the sides as needed.
  4. Pour the batter into the prepared cake pan and bake for 30-40 minutes, or until lightly golden and springs back when touched.
  5. While the cake cools, make the cream cheese frosting by whipping together the softened butter, cream cheese, and powdered sugar until the mixture becomes thick and creamy.
  6. Make the latte soak by mixing the coffee, pumpkin spice, and milk.
  7. Poke holes throughout the cooled cake and pour the latte mixture on top, soaking the cake.
  8. Spread the cream cheese frosting on top. Slice and enjoy!
